A Cayenne type pepper from India. Plants produce a multitude of 3 to 4in long by 0.75in wide pods which taper to a point. Pods mature from green to deep red and are mildly pungent. Used in Indian Cuisine.

BEDGI (BYADAGI)

From the area west of India's Goa, the Bedgi or Byadagi is wrinkly and red and is often chocolate brown when dried. It is 5-7.5 cm long and 8 mm wide. It is quite aromatic


KASHMIRI (DEGHI MIRCH)

Originally a variety grown in Kashmir India, it is now a generic term for any medium long dried red chile. 'Deghi Mirch' is also a mild flavored red chili powder used extensively in Indian Cusine for its colouring properties.. It is more sweet than hot. 'Guajillo' is an appropriate substitute.

Hindi term for hot chiles in Northern India. 'Lal Mirch' is red chile, 'Hari Mirch' is green chile. Kashmiri chiles are known as 'Degi mirch'.
